Chia pudding. I know, stay with me. It may sound a bit crazy but this was legit delicious! My midwife Kiesha Baker and dietitian Amy Gonzalez have both recently suggested chia pudding as a snack so I took that as the universe making it very clear that I should jump on board. These brilliant ladies are never wrong. This superfood snack packs a nutritional punch with tons of vitamins, minerals, healthy fat and fiber but is low carb! Hold the phone! I combined their two recommended recipes to concoct just the right pudding for me and I’m absolutely making this treat a staple in my rotation. Check out Kiesha's recipe here and the one I received from Amy here. I simmered some mixed berries on the stove to reduce them to a compote texture and layered the antioxidant power over the pudding. It was amazeballs! You can find my recipe here. Everything also seems to taste better when stored in glass containers so I store individual servings in mason jars. (Hello, no chemicals leaching into your food!) They are also just extra cute as little mason jar desserts, which is always a bonus.
