Do You Know the Muffin Mom?
Muffins are my love language. I can squeeze so much nutrition into one tiny portable package. If you know me, you know I love all things tiny...babies, reusable containers, all the things. I make muffins in bulk and freeze for busy mornings running out the door to homeschool co op. They make great snacks to take to the park or playdates, as well. Here’s my favorite recipe for you to share with your people. It can be customized however you like. I just use whatever fruit and greens I have on hand. Easy peasy! I've even been known to throw in a cup of home made elderberry syrup in the fall and winter months!
1 cup yogurt (I prefer raw yogurt from a local co op if possible.)
2 ripe bananas
2 cups organic rolled oats
2 eggs (My favorite are organic pasture raised from a local farm.)
1.5 tsp baking Powder
1/2 tsp Baking Soda
1 cup organic fruit of your choice (Berries usually work best. Alternatively, I occasionally use pureed fruit like apple or pear.)
5 oz organic greens of your choice (I like a mix of spinach and arugula.)
Optional superfood additions: 2 tbsp organic chia seeds or hemp hearts
Mix with a blender/food processor/immersion blender until oats and greens are finely chopped and well combined. This food processor and immersion blender combo is affordable and works like a dream. I prefer to bake in reusable silicone baking cups for fast cleanup.
Divide into baking cups and bake at 400F for 20 min.
